Recipe Ingredients
Boiled sweet potato ½ kg
Khoya 250 gm
Fresh milk 1 litre
Boiled rice 1 cup
Sugar 2 cup
Small cardamom 6
Pistachio 15
Almond 15 to 20
Sugar 1 tsp

Recipe Method
First grind 6 small cardamoms with 1 tsp sugar. In a pan add 1 liter milk, 1 cup rice and grinded sugar to cook till all mix together.
Now boil ½ kg sweet potato and mash it to mix in milk and stir it quickly.
When its done add 125 gm khoya with 15 to 20 almond and 15 pistachio and cook for more 5 minutes. Dish it out in a clay bowl and garnish it with almond, pistachio and khoya and serve chilled.

How to Make Beef Wellington Complete Recipe

Serves 6 prep 45 mins cook 30"45 mins
Ingredients:
1kg (2 ¼ lb) fillet of beef, cut from the thick end of the fillet,
trimmed of fat.
salt and freshly ground black pepper
2 tbsp sunflower oil
45g (1 ½ oz) butter
2 shallots, finely chopped
1 garlic clove, crushed
250g (9oz) mixed wild mushrooms
500g packet ready-made puff pastry
beaten egg, to glaze
Preparation:
1-Preheat the oven to 220°C (425°F/Gas 7). Season the meat with salt and pepper.
Heat the oil in a large frying pan and fry the beef
until browned all over.
Place the beef in a roasting tin, roast for 10 minutes,
then remove and leave to cool.
2 -Melt the butter in a pan and fry the shallots
and garlic for 2-3 minutes,
stirring frequently, until softened.
Finely chop the mushrooms, add them to the pan,
and cook, stirring, for 4-5 minutes,
or until the juices evaporate.
then remove from the heat and leave to cool.
3 - Roll out a third of the pastry to a rectangle
about 5cm (2in) larger than the beef.
Place on a baking sheet, prick all over with a fork,
then bake for 12-15 minutes,
or until crisp and golden.
Remove and place on a wire rack to cool.
4 - Place the cooked pastry on a baking sheet,
and spread one-third of the mushroom mixture on the centre.
Place the beef on top and spread the remaining
mushroom mixture over the meat.
Roll out the remaining pastry and place it over the beef,
tucking in the edges and using beaten egg to seal it to the base.
5 - Brush with egg to glaze.
Make a slit in the top for steam to escape.
Bake for 30 minutes for rare, 40 minutes for medium,
or 45 minutes for well done.
If the pastry starts to become too brown,
cover loosely with foil. Remove from the oven
and allow to stand for 10 minutes before serving.

Bengan ka raita (brinjal raita) is one of the tempting dishes served in summer. This cold and fresh raita is served as a side dish but imparts great taste to meal.
Ingredients:
- 3 Brinjals
- 1 cup fresh yoghurt
- Salt to taste
- 1/2 tsp Chilli powder
- 1/4 tsp Turmeric powder
- 1/4 tsp garam masala powder
- 1/2 tsp cumin powder
- 1 clove Garlic (crushed)
- 2 green chillies
- 2 tsp Oil
- 1 onion chopped
- 1 tomato chopped
- Coriander and mint leaves for garnish
Method:
- Smoke whole brinjal on fire or cook for two minutes in oven
- Peel off the burnt skin and take out pulp using a spoon
- Slightly ground the brinjal pulp in hand mortar
- Beat the yoghurt in a bowl.
- Add crushed garlic, all spices and brinjal pulp in yoghurt.
- Make a combined sauce of green chillies, coriander and mint leaves and add it to the yoghurt also.
- Add chopped onion and tomato to the yoghurt as well
- Prepare a seasoning of oil and cumin seeds
- Just before serving add the seasoning to the yoghurt
- Garnish with some coriander leaves.
- Serve with rice or chapatis.
